CREAMY RICE PUDDING



      2 egg yolks                   Cooking the rice
                                    In a medium saucepan add rice, granulated sugar and salt (use the amount of water according to
      ¾ cup uncooked rice
                                    directions you are used to or if using rice from a box follow what the box says). If you use a rice pot,
      1 tbsp. brown sugar, light
                                    put the cooked rice into a medium saucepan once rice is cooked.
      ¼ tsp. cinnamon
      4 tbsp. granulated sugar
                                    Cooking the pudding
      ¼ tsp. salt
                                    Pour in half & half + ½ cup milk and simmer on low heat for 20 minutes, stirring every few minutes
      ½ tsp. vanilla
                                    until thick and creamy. Once thickened, mix in brown sugar.
      1 tbsp. butter, unsalted
      1 cup half & half
                                    Mixing with the egg yolks
      1 cup milk
                                    In a small bowl add egg yolks. Spoon 3 spoonfuls of the pudding mixture in with the yolks and whisk
                                    RAPIDLY to temper and prevent scrambling. Once yolks are warm, add into pudding mixture and
                                    remainder of milk. Cook for 3-5 minutes more until thickened up again. Once thickened, remove
                                    from heat, and add in butter, vanilla, and cinnamon mix well. Pudding can be served warm or cold.
