POPCORN RICE CRAWFISH CAKES



      ½ cup mayonnaise             Combine the first eight ingredients in
      ½  cup (about 3 stalks)      a large mixing bowl. Fold in egg,
        green onions, sliced       crawfish  tails,  and rice.  Add  ½ cup

      2 cloves garlic, minced      breadcrumbs to tighten up the mixture.
      1 tbsp. lemon juice          If necessary, refrigerate until mixture
                                   holds its shape (30 mins. - 1 hour).
      1 tbsp. worcestershire sauce
      1 tsp. Cajun seasoning
                                   Form into 8-10 patties, then gently
      ½ tsp. Louisiana Hot Sauce
                                   coat all sides with the remaining
      Pinch of salt & black pepper   breadcrumbs.
        to taste

      1 large egg, lightly beaten  Preheat a cast iron (or heavy
      1 lb. Louisiana crawfish tails,   bottomed) pan over medium-high heat, then coat the bottom with oil. Once oil is heated, shallow fry
        cooked and peeled          patties in batches, until golden brown. Set aside on a paper towel lined plate or keep warm in the oven
      2 cups Cajun Country Popcorn   on a cooling rack-lined pan.
        Rice, cooked
      1 ½ cups bread crumbs, divided  Serve over a bed of arugula and top with a squeeze of lemon, remoulade sauce, sliced green onions
      Vegetable oil for frying     & a sprinkle of Cajun seasoning.
