BLACK-EYED PEA JAMBALAYA




      2 tbsp. oil                 Makes 8 servings

      1 lb. smoked sausage, cut up
                                  Heat  oil.  Add sausage,  ham,  onion,  garlic
      ½ lb. ham, diced
                                  and sweet pepper and cook for 25 minutes.
      1 onion, chopped

      4 cloves garlic, chopped    Add black-eyed peas, broth, parsley and
      1 sweet pepper, chopped     green onions. Simmer, stirring occasionally,
                                  for 1 hour.
      2 - 15 oz. cans black-eyed
         peas with jalapenos
                                  Add rice, 1 cup at a time, depending on
      2 cups beef broth
                                  moistness desired. Stir gently to mix well.
      Parsley, to taste
      Green onion, to taste       Simmer until rice is cooked through. Fluff rice

      5 cups cooked long-grain rice   and enjoy!
      Salt and cayenne pepper,
