Chef’s tip
Tilapia is a delicate, white fish
that absorbs flavour very well.
It cooks quickly and is easy
to prepare. It’s best steamed,
baked or broiled.
Steamed fish
TILAPIA IS AN AFRICAN FISH WHICH IS EXTREMELY HEALTHY AND LOW IN FAT
Preparation time: 10 minutes 1 tbsp corn flour
Cooking time: 25 minutes 1 piece sliced ginger
Serves 4 1 tbsp light soy sauce
1 tsp chilli powder
You will need: Spring onion chopped
1 chilli thinly sliced
300g fish fillets (Tilapia or Sea Bream) 1 tbsp oil
A few drops of cooking oil A few drops of sesame oil
1 tsp salt
Method
1 Clean the fish fillets and remove the skin. If you’re using frozen fish, take off the skin while it’s still
frozen (easier to peel).
2 Cut the fish into pieces and rub in the oil and salt. Coat the fish in corn flour.
3 Place the fish in a container which can be used in a steamer.
4 Add ginger, soy sauce and chilli powder to the fish and steam for 10-15 minutes or until cooked.
5 Place the cooked fish in a serving dish. Garnish with chopped spring onions and the sliced chilli.
6 Heat 1 tbsp oil, adding 4-5 drops sesame oil and pour over the steamed fish.
7 Serve hot with boiled rice or rice noodles.
