                     SPICY AND MOUTH-WATERING, THIS DISH IS QUICK AND EASY TO MAKE

                                                                                                                                           A TANGY BLACK BEAN SAUCE LENDS A RICH FLAVOUR TO SHELLFISH DISHES
                        Marination time: 60 minutes           1 tbsp red chilli powder
                        Preparation time: 10 minutes          1 tbsp fresh crushed ginger                                                     Preparation time: 15 minutes           2 tbsp black bean sauce

                                                              1 tsp ground coriander powder                                                                                        For the broccoli:
                        You will need:                        2 tomatoes grated                                                               You will need:                          1 cup broccoli florets
                                                              1 tsp tomato purée
                          300g cleaned sliced and washed      1 tsp fresh crushed green chillies                                                300g queen prawns                     1 tbsp cooking oil
                        fish fillets (Tilapia or Sea Bream)   1 tsp ground cumin powder                                                         1 tsp salt                            1 tsp fresh crushed garlic
                          1 tbsp salt                         Cooking oil to fry                                                                2 tbsp corn flour                    A pinch of salt
                          ¼ cup lemon juice                   Freshly chopped coriander to garnish                                              1 tbsp cooking oil                    1 tbsp oyster sauce

                                                      Method                                                                                                      Method for the prawns
                    1 Marinate the fish in salt and 1 tbsp lemon juice and leave in fridge for an hour or so.                             1 Shell and de-vein the prawns. Remove the heads but keep the tails. Cut open prawns into butterfly
                                                                                                                                          shape and stick the tail back.
                    2 Drain the excess liquid and shallow fry the fish until cooked. Leave aside.
                                                                                                                                          2 Marinate the prawns in salt, corn flour and 1 tbsp oil and chilli. Leave aside for 10 minutes.
                    3 Blend the rest of the ingredients with the remaining lemon juice except the cooking oil.
                                                                                                                                          3 Steam the marinated prawns for 4 minutes. Heat the black bean sauce, add the garlic and pour over
                    4 Heat 1 tbsp cooking oil, add the blended mixture and cook for 4-5 minutes until it thickens. Gently                 the prawns and mix. Serve hot.
                    pour the mixture over the cooked fish making sure that the fish does not break.
                                                                                                                                                                  Method for the broccoli
                    5 Garnish with fresh chopped coriander and serve hot.
                                                                                                                                          1 Boil the broccoli florets until the colour changes, drain water and leave aside.
                    Alternatively, you can smear the blended masala on the uncooked marinated fish and bake in an
                    oven at 180°C/350°F/Gas Mark 4  for 20 minutes.                                                                       2 Heat the oil in a wok, add garlic, salt and oyster sauce and then the broccoli. Stir once or twice until
                                                                                                                                          it is cooked. Decorate the steamed prawns with the seasoned broccoli.
