                                                                                                                                             Crunchy cabbage

                                                                                                                                            THIS IS AN INCREDIBLY FLAVOUR-PACKED SALAD THAT’S
                                                                                                                                                    BEST SAVOURED ON A HOT SUMMER’S DAY



                                                                                                                                              Preparation time: 20 minutes          ½ a medium cabbage shredded
                                                                                                                                              Serves 4-6                            1 bunch of spring onions
                                                                                                                                                                                   finely chopped
                                                                                                                                              You will need:
                                                                                                                                                2 packets of 2-minute noodles, any flavour  For the dressing:
                                                                                                                                                1 tbsp oil                          ½ cup vinegar
                                                                                                                                                ½ cup sesame seeds                  ½ cup brown sugar
                                                                                                                                                ½ cup either peanuts, pecans or a mix   ½ cup extra virgin olive oil



                                                                                                                                                                            Method
                                                                                                                                          1 First, make the dressing. Mix all the ingredients together in an airtight container until the sugar
                                                                                                                                          dissolves. This dressing will stay in the fridge for several weeks. 

                                                                                                                                          2 Crush the noodles and mix in the flavouring which comes with the noodles.

                                                                                                                                          3 Dry fry the noodles gently in oil over a low heat until they are golden brown.

                                                                                                                                          4 Roast the sesame seeds and nuts in a frying pan on a medium heat.

                                                                                                                                          5 Mix the roasted seeds and nuts with the noodles. (This mixture can be stored in an airtight container
                                                                                                                                          for several weeks.)

                                                                                                                                          6 Mix together the cabbage and the onions. Pour the dressing and the noodles/nut combination just
                                                                                                                                          before serving to retain the crunchiness of the salad. You will have enough dressing for more than one
                                                                                                                                          portion of the salad, so store the leftovers in the fridge and use when required.
