                                       Spare ribs





                                 Chinese style







                         THE SOY SAUCE AND HONEY GIVE THIS DISH A CHINESE INFLUENCE


                        Preparation time: 10 minutes         You will need:
                        Marination time: 4 hours or
                        preferably overnight                   1 rack of ribs (1.5kg)
                        Cooking time: 30-50 minutes            6 tbsp soy sauce
                        Serves 4                               3 tbsp honey
                                                               2 tbsp brandy
                                                               1 tsp salt
                                                               A pinch of white pepper



                                                      Method
                    1 Remove the flap and extra fat from the ribs and score all over with a sharp knife.

                    2 Line a baking tray with foil and lay the racks of ribs inside.

                    3 Mix the rest of the ingredients together. Then, using your hands rub this marinade mix into the ribs.
                    Leave to marinate for at least 4 hours, but overnight is best.

                    4 Preheat the oven and bake the ribs for 30-50 minutes at 160°C/325°F/Gas Mark 4.
                                                                                                                                                                                                         Use a combination of oven
                    5 Add water if the sauce starts to evaporate.                                                                                                                                       roasting and barbecue grilling
                                                                                                                                                                                                        for a charred finish. Delicious.
                    6 During baking time, baste the ribs and turn them over several times. Serve hot.
