3 High Fiber Whole Food Recipes


               Baked Chickpea
               Serves: 2
               Ingredients
                     1 (400g) can chickpea, (rinsed and drained)

                     4 tbsp. fresh parsley (chopped)

                     1 tsp. ground cumin

                     3 cloves garlic (minced)

                     1/4 tsp. ground coriander
                     1/4 tsp. baking soda

                     1/4 tsp. salt

                     4 tbsp. onion (chopped) (pressed)
                     1 tbsp. plain flour

                     1 egg (beaten)

                     2 tsp. olive oil

               Instructions
                   1.  Preheat oven to 390 F.

                   2.  Into a food processor, combine chickpeas, cumin, coriander, parsley, garlic, baking soda

                       and salt. Process until pureed.

                   3.  Transfer mixture into a bowl; add pressed onions and mix to blend.
                   4.  Mix in flour and egg, mix until well incorporated.

                   5.  Form patties, 3 inch in diameter. Set aside for 12 minutes

                   6.  Heat oil over a medium flame in a large, oven-safe frying pan.
                   7.  Fry patties for about 3 minutes per side or until golden brown. Transfer into oven and

                       heat for about 10 minutes.

                   8.  Serve with whole grain pita bread.
