INGREDIENTS INSTRUCTIONS
2 tbsp. olive oil 1. Heat the olive oil in a medium to large soup pot
1 cup diced onion over medium heat. Add the onions and garlic and
cook 2–3 minutes, until soft and transparent

(don’t allow them to brown).
8 oz. chorizo sausage,
thinly sliced 2. Add the chorizo and potatoes and sauté for
5 to10 minutes more, or until the potatoes are DINNER
2 cups peeled, sliced
potatoes slightly golden and the sausage is browned.
4 cups chicken stock 3. Pour in the stock and water and bring to a
boil. Cook at a gentle boil over medium heat for
4 cups water
15 minutes.
½ lb. kale, stemmed
and sliced 4. Add the kale and green beans, reduce the heat
to low, and simmer, uncovered, for 5 minutes.

trimmed and sliced 5. Season with salt and pepper, to taste, and ladle
