Top Mistakes with HACCP
At EAGLE, we focus on continuous improvement
and the addition of value during our audits. One
of the ways we do this is by sharing lessons learned
at industry events, user group meetings and through
our newsletter. The following are mistakes that we
have seen companies make. They are included in
this book in hopes that other companies will avoid
these mistakes.
1. Not reviewing a current HACCP plan
already in place. HACCP plans must be
reviewed at leas t annually; do not let your
company fail by not reviewing it when changes
are made (i.e.: changes to include process,
equipment, raw material, finished product,
packaging, industry recalls, etc.). Reviewing
your HACCP plan frequently helps ensure
everyone is up-to-date on the latest
information, as well as increases conformance.
2. Management does not commit.
Management, as well as the whole staff, must
buy into HACCP. Many employees view it as a
necessary evil and as only the job of the quality
assurance manager, but it takes every
employee’s effort and commitment to be a
