Cassata Cake

                Ingredients



                    1 ½ cups cake flour

                    ½ teaspoon baking powder
                    ¼ teaspoon salt
                    5 large eggs eggs
                    ½ cup cold water

                    1 ¼ cups white sugar
                    1 teaspoon vanilla extract
                    ½ teaspoon cream of tartar
                    2 pounds whole milk ricotta cheese

                    2 ¼ cups confectioners' sugar
                    ½ teaspoon ground cinnamon
                    1 ½ teaspoons vanilla extract
                    2 (1 ounce) squares semi-sweet chocolate

                    ½ cup candied lemon peel
                    ⅓ cup white sugar
                    ¼ cup water
                    2 tablespoons light rum

                    6 (1 ounce) squares bittersweet chocolate, chopped
                    ⅓ cup heavy whipping cream
                    3 tablespoons unsalted butter, cubed

                Step 1


                Preheat the oven to 325 degrees F (165 degrees C). Grease and
                line with parchment paper 2 nine inch round layer pans.
