Decadent Chocolate Sandwich Cookies




                Our  neighbor  Jan  descr ibed  these  as  Oreo  cookies  with  a  P hD.  It’s
                tr ue.   They’re   better,   smar ter,    and   more    likely   to   succeed.   A   small
                amount  of  sugar  and  lots  of  good-quality  cocoa  powder  make  these
                cook ies dark, r ich , and pleasantly bitter.

                   Th e  dough  ca n  be  difcu lt  to  work  with  if  it  gets  too  soft.  Roll  it
                between  sheets  of  plastic  wrap  or  parchment  paper  and  return  it  to
                the  refr igerator  br iey  if  it  becomes  sticky.  You  can  also  use  a  little
                bit  of  confect ioners’  sugar  on  the  plastic  wrap  and  the  cookie  cutter

                for a clean release.







                                        MAKES  ABOUT 2 DOZEN  2-INCH COOKIES






                1⅔ cups all-purpose flour

                ¾ cup unsweetened cocoa powder

                ¾ teaspoon fine sea salt
                ½ teaspoon baking  soda

                1 cup (2 sticks) unsalted butter, room temperature

                ¾ cup suga r
                1 egg  yolk

                1 teaspoon vanilla extract


                FOR THE FILLING:
                ½ cup (1 stick) unsalted butter, room temperature

                2 cups confectioners’ suga r
                1 tablespoon cream

                1 teaspoon vanilla extract
