lling and refrigerate just long enough to rm up the lling.
WITH A TWIST
Choc ol ate–Peppermint Stick Sandwich Cook ies: Substitute
½ teaspoon peppermint extract for the vanilla extract in
the lling, and mix ¼ cup cr ushed peppermint candies
into the lling.
Choc ol ate–Salted Caramel Sandwich Cook ies: Use the
following lling in place of the original. Melt 2 tablespoon s
unsalted butter in a small saucepan over medium heat.
Add ¼ cup Salted Ca ramel Sauce and stir to combine.
When the mixture begins to bubble, slowly add 1 cup
con fection ers’ sugar, stirring as you go, until the mixture
is cohesive and smooth. Stir in an additional 2 tablespoon s
Salted Ca ramel Sauce and 1 teaspoon ne sea salt and
set aside to cool slightly. When it is spreadable, sandwich
the cookies with about 1 t ablespoon of the lling.
