Chocolate-Dipped Peanut Butter Creams




                Chocol ate      plus   peanut      butter    equals    a   tr uly   per fect   marr iage.
                Wh en  you  dunk  these  in  melted  chocolate,  it’s  a  little  bit  like  biting
                into  a  peanut  butter  cu p  with  a  cookie  inside.  If  you’re  tempted,  I
                recommend         going    whole     hog    and    dipping     the   entire    cookie    in

                chocol ate. Double the coa ting recipe if you do.







                                                MAKES  2 DOZEN  COOKIES







                1½ cups all-purpose flour
                2 teaspoons baking  soda

                1 teaspoon fine sea salt
                1¼ cups rolled oats

                ½ cup finely chopped peanuts

                1 cup (2 sticks) unsalted butter, room temperature
                1 cup natural crunchy salted peanut butter

                1 cup gr anulated suga r
                ½ cup ligh tly packed ligh t brown sugar

                2 eggs

                2 teaspoons vanilla extract


                FOR THE FILLING:
                1 cup confectioners’ suga r

                ⅔ cup natural salted peanut butter
                2 tablespoons unsalted
