Crunchy Chocolate Chip Cookies
If you’re looking for some cr unch with your other wise r ich and
gooey chocol ate chip cook ie, this is the recipe for you. The vinegar
in this reci pe works to act ivate the baking soda, which g ives the
cook ies just the r ight amount of lift. Don’t worr y: you won’t know
it’s there.
MAKES ABOUT 3 DOZEN COOKIES
2 cups all-purpose flour
1 teaspoon fine sea salt
½ teaspoon baking soda
½ teaspoon baking powder
¾ cup (1½ sticks) unsalted butter, room temperature
¾ cup packed dark brown sugar
¾ cup gr anulated suga r
½ teaspoon instant espresso powder (optional)
2 teaspoons vanilla extract
1 tablespoon cider vinega r
1 egg
1½ cups semisweet chocolate chips
1. Preheat the oven to 350 degrees F. Line 2 baking sheets with
parchment paper. In a medium bowl, whisk together the our,
salt, baking soda, and baking powder. Set aside.
