Grandma Ma c’s Chewy Ginger Molasses

                My g randmother was an acc omplished cook and baker, but in 1967
                she   decided     that   the   per fect    g inger   cookie   was   missing     from    her
                reper toire.    So    she   place d   an    ad   in   the   local   paper     requesting
                favor ite    g inger     cook ie    reci pes    from    members        of   their    r ural

                community. As you ca n imag ine, the recipes she received resembled
                one  another  closely,  most  for  soft  and  chewy  g inger  cookies  var ying
                only  in  the  combinations  and  amounts  of  spices  used.  I’m  not  sure

                if   she   found    one   in   the   pile   that   was    better    than    hers,   but    I
                unear thed      a   reci pe   that   looked   something      like   this   one   with   the
                title: Grandma Mac’s Ginger Cookies.
                   I   spice d   up   the   or ig inal   with   fresh   g inger,   more   g round   g inger,
                and  black  pepper.  Allow  time  for  the  dough  to  chill  and  take  on  the

                complex      and    intense     g inger    avor    that    imbues     these    “per fect”
                g inger molasses cr inkles.

                2¼ cups all-purpose flour

                2 teaspoons baking  soda
                2 teaspoons gr ound gin ge r

                1 teaspoon gr ound cinnamon
                ½ teaspoon freshly gr ated nutmeg

                ½ teaspoon fine sea salt

                ½ teaspoon gr ound cloves
