Chewy      Triple-Ginger       Mol asses     Crinkles:     Mix    ½   cup    nely

                   Chewy  Choc olate-G inger  Mol asses  Crinkles:  Beat  ½  cup  (1

                   stick)  butter  with  1  cup  granulated  sugar.  Substitute  ¼
                   coc oa   powder  for  ¼  cup  our.  Mix  ¼  cup  nely  chop ped
                   cr ystallize d        ginger        and      ½     cup       nely       chop ped
                   bittersweet  choc ol ate  or   choc ol ate  chips  into  the  dough
                   after incorporating the dr y ingredients.












                   NOTE:  To  ma ke  ging er  juice,   peel   and    grate   a   knob    of   fresh   ginger   using   a
                   Microplane   or  fi   -hol ed  box  grater.  Gather  the  grated  ginger  into  a  sma ll
                   square   of   che esecloth   or   the    corner   of   a   clean   dish   towel.   Twist   and
                   squeeze over a sma ll bowl unt il the  juice runs out.
