Glazed Strawberry-Rhubarb Pie
This is the pie of my youth. My grandmother was a stupendous pie
maker. She was one of those women who never used a measuring
spoon, who thought that leveling off a cup of flour was ridiculous.
She cooked by feel, by touch. She was also a very generous cook.
My grandma had six children and fourteen grandchildren, knew
every one of our favorite pies, and baked them at each family
gathering. Trust me—there were a lot of pies!
My all-time favorite pie was strawberry-rhubarb. When I was
growing up, my grandma filled all of my pie-eating desires, but when
she passed away, I felt the need to break out the rolling pin. This is
my recipe for strawberry-rhubarb pie. You layer the fruit, spooning
the sugar over each layer. During the baking process, the sugar
melts, creating a glaze that sweetens the pie but maintains the
integrity of each piece of fruit. Although she didn’t pass this recipe
down to me, I still think of my grandma each time I make it.
