In a large bowl, combine the heavy cream and the confectioners’
sugar. Whip the cream until it forms soft peaks. Fold in the vanilla
extract.
Spread approximately /3 cup of whipped cream over the bottom of

the graham cracker crust. (Reserve the rest of the whipped cream
for topping the pie.) Gently pile the glazed strawberries on top, and
chill the pie in the refrigerator.
Half an hour before you plan to serve it, remove the pie from the
refrigerator so it can come to room temperature. Either mound the
reserved whipped cream on the center of the pie or place a dollop on
each of the individual slices.
