Makes 4 side salads
Just like the pork pies (page 77) in this menu, this salad is inspired by the unexpected party
Bilbo hosts for the dwarves. Of course, in true hobbit fashion, he would not have let short
notice result in poor hospitality. This perfectly balanced salad has everything you could want
in an autumn dish: sweet-tart apples, juicy pears, buttery pine nuts, hearty kale, creamy
goat cheese, and succulent pomegranate. And it all comes together in a snap!
INGREDIENTS
For the Salad
¼ cup pine nuts
3 cups kale, torn into bite-size pieces and lightly packed
½ Bartlett pear
½ Honeycrisp apple
½ pomegranate, seeded *
¼ cup plus 2 tablespoons crumbled goat cheese
For the Dressing
2 tablespoons pomegranate juice
2 teaspoons lemon juice
1 teaspoon honey
½ teaspoon white balsamic vinegar
⅛ teaspoon salt
⅛ teaspoon pepper
INSTRUCTIONS
1 Preheat oven to 325°F. Spread pine nuts evenly on a baking sheet
and toast for 5 minutes or until very lightly browned. Set aside.
2 Cut pear into ¼-inch cubes. Cut apple into thin slivers, then cut the
slivers in half width-wise.
