Arrange leaves on the pie so they slightly overlap and are in

                concentric circles. Be sure to lay the first circle inside the pie pan
                and not on the outer crust of the pie, so that a narrow band around

                the outer edge is left uncovered (this will act as a vent to allow steam

                to escape). Place the apple-shaped cutout in the center of the pie.

                8 Brush with egg wash and sprinkle with turbinado sugar. Bake for

                45 to 50 minutes or until the crust is golden brown and the apples
                inside are tender. When there are only 20 minutes left in the bake

                time, check the pie for browning. If the crust is as dark as desired,

                loosely cover the edges of the pie with aluminum foil for the
                remainder of the bake time. If a darker color is desired, leave

                uncovered until that color is reached.

                9 Remove from oven and allow to rest for 4 to 24 hours.                   **

                   *  Laying individual apple pieces in the pie pan takes longer than

                   dumping them all in at once, but you’ll thank yourself later. It

                   helps prevent gaps and encourages even baking.
                   **  This recipe needs at least 4 hours to rest, so be sure to leave

                   plenty of time.
