Since this is a Winnie-the-Pooh recipe, it felt appropriate to sweeten
this tribute to Rabbit’s garden with a touch of honey. However, maple
syrup is a delicious, seasonally appropriate alternative.
INGREDIENTS
For the Salad
1 acorn squash (approx. 1 lb., 5 oz.)
2 beets
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon kosher salt
¼ teaspoon pepper
12 large turnip greens, deveined *
6 large basil leaves
¾ cup chopped walnuts, toasted if desired
¾ cup crumbled feta cheese
6 tablespoons dried cherries
For the Honey Balsamic Vinaigrette
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1 tablespoon honey
⅛ teaspoon salt
⅛ teaspoon pepper
