¼ teaspoon black gel food coloring
1¼ cups plus 2 tablespoons flour
For the Glaze
¼ cup butter, softened
1 clove garlic, minced
3¾ teaspoons grated Parmesan cheese
INSTRUCTIONS
1 To make the red buns, first stir together the water and milk in the
bowl of a standing mixer. Sprinkle the yeast on top and allow to rest
for 5 minutes, stirring gently after 1 to 2 minutes.
2 Add the butter, egg, salt, garlic, sugar, and food coloring to the
bowl. Beat on medium-low speed with a paddle attachment for 30
seconds or until the butter is broken up into pieces. Gradually beat in
the flour on medium speed until just combined.
3 Turn the dough out onto a floured surface and knead until it is soft,
mostly smooth, and only slightly sticky (approximately 5 to 8
minutes). You may need to periodically re-flour the surface to keep
the dough from sticking.
4 Coat a large bowl with cooking spray and place the dough inside,
turning once to coat. Cover the bowl with a clean kitchen cloth and
allow to rise for 1 hour or until the dough has roughly doubled in size.
5 Repeat Steps 1 to 4 for the black dough.
6 Line two baking sheets with silicone mats or parchment paper.
Punch down the red dough. Separate the dough into 15 balls of
equal size (approximately 0.8 ounce each) and roll into 5-inch logs.
7 Repeat with the black dough. Line each black log against 1 red log
so that they are touching, creating 15 pairs of logs. *
