Makes 6 cups cider
“On all sides he beheld vast store of apples; some hanging in oppressive opulence on the
trees; some gathered into baskets and barrels for the market; others heaped up in rich piles
for the cider-press.”
This Thanksgiving try a twist on classic apple cider by flavoring it with homemade pumpkin
syrup! This no-fuss recipe can be prepared in a slow cooker, then placed back in the same
crock to keep warm while serving. You can even bottle any extra syrup to give as gifts so
folks can flavor their own drinks at home.
INGREDIENTS
6 Fuji apples
2 Granny Smith apples
1 orange
2 cinnamon sticks
2 star anise seed pods
1 cup pumpkin syrup, plus more to taste (see recipe on page
247)

INSTRUCTIONS
1 Core apples and cut into eighths. Peel orange and cut into
quarters. Add to a slow cooker with cinnamon and anise. Pour 4
cups water over fruit mix.
2 Cover and heat on high for 5 hours. Pour mix through a colander
into a large bowl. Discard fruit. Stir in pumpkin syrup until dissolved.
