Makes 21 duchess potatoes

                These baked garlic mashed potato dollops hold a special surprise: a cheddar cheese
                center!


                INGREDIENTS

                 1.5 lb. russet potatoes (approximately 4 medium potatoes)
                 ½ cup butter (1 stick), divided

                 2 cloves garlic, minced

                 1 tablespoon milk
                 ½ teaspoon salt

                 ¼ teaspoon pepper

                 4 egg yolks
                 4 ounces mild cheddar cheese cubes
