                                 Cajun meatloaf



                                         Ingredients


                                           Seasoning mix

               2 bay leaves                                         1 tbsp salt
               ½ tsp ground red pepper                      1 tsp black pepper
               ½ tsp white pepper                               ½ tsp ground cumin
               ½ tsp ground nutmeg

                                             Meat Loaf

               1.5 lbs ground beef                          ¾ cup chopped onions
               4 tbsp un-salted butter                         ½ cup chopped bell pepper
               ½ cup chopped celery                         2 tsp minced garlic
               ¼ cup chopped green onions                   1 tbsp hot sauce
               ½ cup evaporated milk                                             1 tbsp Worcestershire sauce
               1 cup fine dry bread crumbs                  ½ cup catsup
                                                            2 eggs lightly beaten

                                         Lagniappe


               Combine all the seasoning ingredients in a small bowl.

               Melt the butter in a sauce pan; add the onions, celery, peppers, green onions,
               garlic, hot sauce, Worcestershire, and the seasoning mix.  Sauté till mixture
               gets sticky (about 6 minutes)

               Stir in the milk and catsup, cook for another two minutes, remove from heat
               and allow cooling.

               Place the ground beef and pork in an ungreased baking pan, add the eggs and
               cooled vegetables removing the bay leaves.  Add the bread crumbs and mix
               by hand until thoroughly combined. Shape into a loaf, and bake uncovered at
               350 for 25 minutes, then raise temp to 400 for another 35 min or until done.
               Serve with very hot Cajun sauce on top. (See sauces pg 328)
