                               Cajun Pork roast



                                         Ingredients


               (1)-3 or 4 lb pork roast
               ½ cup chopped celery
               ½ cup green bell peppers
               ½ cup finely chopped onion
               1 tsp white pepper
               1 tsp red pepper
               1 tsp minced garlic
               1 tsp paprika
               2 tsp black pepper
               1 ½ tsp salt
               1 tsp thyme
               3 tbsp butter
                                          Lagniappe


               Thoroughly mix all the seasoning ingredients and combine with the other
               ingredients in a sauté pan for about 4 minutes over high heat, remove and
               allow the mixture to cool.

               With a sharp knife, slice the Pork Roast about an inch thick length wise being
               careful not to cut completely through the roast, you should have a large piece
               of filleted pork when you are finished.

                Pound with a meat tenderizer till flattened, spread a layer of the cooled
               seasoning & vegetable mixture on the filet and roll back up so the fat side of
               the roast is out when you are finished.

                Tie with heavy string. Take any remaining vegetable mixture and rub the
               exterior of the roast by hand.

                Bake uncovered at 275 for 3 hours then 425 till the fat cap turns brown.
