“Hot”
Pickled bologna
Ingredients
1 ½ cups water
2 cup white vinegar
1 habanera pepper
1 tbsp red pepper flakes
1 tbsp minced garlic
1 tbsp paprika
1 tbsp black pepper corns
1 tbsp kosher salt
1 ½ tbsp pickling spices
1 large onion sliced
1 can baby corn
2 whole garlic cloves
4 bay leaves
4 jalapenos
3 lbs of smoked, hot or ring bologna

Add all the Brining ingredients together and bring to a boil, let steep for
several minutes till the brine has cooled. (This is important, the brine must
be cool before pouring over the sausage or it will partially cook them and
become greasy)
Slice the onions and layer them on the bottom of the jar, add a layer of the
sausage, corn and jalapenos and repeat the process till the jar is full. Place
the garlic cloves and bay leaves somewhere in the jar and fill the jar with the
brine. Make sure all the spices, and peppers in the brine get into the jar.
