Pickled

                                    Party shrimp




                                         Ingredients




               1 cup thinly sliced onion
               4 bay leaves crumbled
               2 oz bottle capers (drained & chopped)
               ¼ cup lemon juice
               1 cup cider vinegar
               ½ cup olive oil
               1 tsp minced garlic
               1 tsp kosher salt
               1 tsp celery seeds
               1 tsp red pepper flakes
               2 lb large shrimp, peeled & deveined

                                         Lagniappe





               Mix all ingredients in a large ceramic bowl except for shrimp

                In a large sauce pan bring 2 quarts of salted water to a boil. Add the shrimp
               and cook for about two minutes or until pink.

               Drain the shrimp and immediately transfer to the marinade.

               Allow to cool and marinate overnight in the fridge.

               Transfer to glass jars and serve chilled when ready.
