Gas grill boys

                                     Creole sauce




                                         Ingredients



                                            Seasoning

               2 bay leaves                                   ¾ tsp oregano
               ½ tsp salt                                       ½ tsp white pepper
               ½ tsp red pepper                            ½ tsp thyme
               ½ tsp paprika,                                ½ tsp black pepper
               ½ tsp basil
                                               Sauce

               1 stick butter                                        1 cup crushed tomatoes
               ¾ cup chopped onions                         ¾ cup chopped celery
               ¾ cup chopped bell pepper                  1 ½, tsp minced garlic
               11/4, cup chicken broth                         1 cup tomato sauce
               1 tsp sugar

                                         Lagniappe



               Melt the butter in a heavy pan, stir in the tomatoes, and add the vegetables
               and seasonings, cooking till the onions become clear. Stir in the chicken
               broth and the cup of tomato sauce, 1 tsp sugar and ½ tsp hot sauce.  Simmer
               for 20 to 30 minutes.

               Add any shrimp, chicken or crawfish the last few minutes and serve over rice
               or my favorite, baked crunchy Jambalaya.
