Fra Diavolo
Pontchartrain Sauce
Don’t know who Fra was but she made some dam good sauce
(Serve with fish)
Ingredients
2 tbsp olive oil
6 very thin rings red onion
6 garlic cloves smashed
3 Roma tomatoes, seeded cut into ¼ inch slices
¾ tsp red pepper flakes
½ cup dry white wine
2/3 cup tomato juice
2/3 cup heavy cream
4 oz fresh basil (about ½ cup) cut into strips
4 oz tiny shrimp
Salt and pepper to taste

Heat the oil in a sauté pan and add the onion and garlic. Turn the heat to high
and add the tomatoes. Cook for about a minute and add the pepper flakes and
white wine. Reduce the heat to simmer. Cook till the liquid has nearly
evaporated.
Add the tomato juice and heavy cream and simmer till the liquid has reduced
by half. Add the Basil and shrimp and simmer until the shrimp are
thoroughly cooked. Season with salt and pepper
Normally this sauce is served with Red Snapper over a bed of rice
