Brown sauce

                                           For fish



                                         Ingredients

               ¼ cup fine chopped onion
               2 tbsp butter
               2 tbsp flour
               ¾ cup fish stock
               1-8oz can tomato sauce
               ½ tsp Worcestershire sauce
               ¼ tsp salt
               ¼ tsp dried oregano
               ¼ tsp thyme
               ¼ tsp garlic powder
               1/8 tsp white pepper
               1/8 tsp cayenne

                                         Lagniappe



               Sauté the onion in the butter in a medium sauce pan, stir in the flour and stir
               constantly till the mixture (Roux) is medium brown (about 10 minutes) add the
               spices and cook another few minutes till they are well incorporated with the roux.
               Lower the heat and add the stock, tomato sauce, and Worcestershire sauce and bring
               to a boil
