CUTTING BOARD/MEAT BLOCK Cleaning & Sanitizing
Turn cutting boards sideways on drain board
Set up 3-compartment sink with Manual and let air dry. Do not wipe.
Detergent and water in first sink, warm rinse
water in the second sink and Food Surface NOTE: If significant stains are present, follow
Sanitizer and water solution in the third sink. Cutting Board/Meat Block Destaining
Create solutions as specified by the product procedure.

Place cutting boards in first sink of detergent
solution. Soak for 5 minutes and scrub off any
remaining soil or stains using a nylon scrub
brush.
Submerge cutting board in rinse water.
Submerge in sanitizer solution for 1 minute, or
as specified by product label and/or local
guidelines.
