每年立冬过后,五华县龙村镇的村民便开始制作古法熏鱼。龙村地处五华最南端,冬天北风
寒冷干燥。当地村民利用这以独特的自然条件,制作出了风味独特的腊鱼。传统制作通常一
次熏制十多条草鱼或鲢鱼。因采用甘蔗熏制,在当地被称为“甘蔗熏鱼”,是龙村人春节比
备的年货之一。
■ Dish Story
Every year after the beginning of winter, villagers of Longcun Village in Wuhua County, begin pre-
paring the traditional smoked fish. Situated at the southernmost tip of Wuhua, the region experi-
ences cold and dry northern winds in winter, which locals utilize to produce this distinctive cured
fish. Traditionally, they smoke over ten grass carp or silver carp at a time. The use of sugarcane in
the smoking process gives it the local name “Sugarcane Smoked Fish”. It has become a traditional
New Year’s staple for the people of Longcun.
