12 Flat Cake (Stottie)Preparation time:15 minutes, plus 1 hour 20 for it to riseCooking time:16 minutesMakes:2 flat cakesIngredients150 ml whole milk150 ml tepid water1 tsp granulated sugar1 tbsp vegetable oil2 tsp fast acting yeast450g strong flour1 tsp salt%u00bd tsp white pepperThe Italians have focaccia. The French have baguettes. And we have the wheel-shaped flat cake. It is better known now by the Geordie word stottie, but flat cake is the traditional word in Sunderland. Cut it into triangles and fill it with ham and pease pudding. Instructions1. Warm the milk in the microwave for 30 seconds. 2. Put the milk, water, sugar and oil in a large mixing bowl. Sprinkle over the yeast and let it dissolve. Once dissolved stir to combine all the ingredients and leave for 10 minutes.3. Add half of the flour and stir it in. Then add the rest of the flour with the salt and pepper and mix until all the liquid has been incorporated into the flour.4. Put the mixture onto a clean worktop and knead it for around 8 minutes until the dough is smooth.5. Clean the bowl, rub it with a small amount of oil and put the dough back inside. Cover it with a tea towel and leave it to rise in a warm draft free area for around an hour. It should double in size.6. Pre heat the oven to 180%u00b0C/160%u00b0C fan oven.7. Push down on the dough to get rid of the gas and put back on your worktop. Cut it in half and use your hands and rolling pin to form two flat cakes around 20cm in diameter. 8. Oil a baking tray, put the cakes on it, then cover them with a tea towel and let them rest for 10 minutes. Push a hole in the middle using your finger, and sprinkle a coating of flour over the top.9. Put the tray in the bottom half of the oven. Bake for 8 minutes, then rotate the tray and bake for another 6-8 minutes until they become lightly golden on top.10.
