80 Coconut HaystacksPreparation time:15 minutesCooking time:20 minutesServes: 18Ingredients350g desiccated coconut150g caster sugar3 eggs%u00bd a tin of condensed milkIt%u2019s not clear what the origin of coconut haystacks is, but they are something thing that seems to bring back a lot of nostalgia for Wearsiders of a certain age. A very easy recipe, they take no time at all to make.Instructions1. Pre heat the oven to 170%u00b0C/150%u00b0C fan oven.2. Line a baking tray with baking parchment or greaseproof paper.3. In a large bowl mix together the coconut and caster sugar until combined.4. Beat the eggs and add to the coconut and sugar mixture. Slowly add the condensed milk until it looks like damp sand. If they look very wet they%u2019ll need a touch longer in the oven.5. Make into haystack shapes on the baking tray.6. Bake for around 15-20 minutes. Take them out when they are just starting to colour. Put them on a cooling rack and put a glac%u00e9 cherry on top of each.Gan git posh: Once cooled, dip them in melted dark chocolate instead of adding the cherries.Cannet be boshed: Buy one from the bakery in Beamish when you next go for a trip.
