CBBQA BBQ 102 CLASS IN LIVERMORE, CA

The California BBQ Association hosted a BBQ 102 class on January 11, 2020 in Liv- ermore, CA, the first of six classes planned for the year. During the 102 class, 37 stu- dents were instructed by top competition pitmasters on the preparation and cook- ing of a variety of meats. The competition portion of the class included instruction on brisket and pork shoulder along with a desert module. Other meats included pork belly, beef ribs, pork loin, side dishes and sausage. Many of the students had also attended the BBQ 101 class last year, where they learned about equipment, fire management, and sauces, along with competition style ribs and chicken. After completing both classes, students should have the skills of an accomplished back- yard pitmaster and a view into competi- tion BBQ.
After instruction, students and volunteers were treated to a BBQ buffet with all the finished products. Everything was deli- cious and graduates were anxious to apply their newly learned skills at home. Other upcoming classes include a competition class on March 13 and a BBQ 101 class on
April 20. Snake River Farms donated all the delicious meat, Sharpe Gourmet Cook- ing Wood supplied the wood, and rubs were supplied by Simply Marvelous and Big Poppa Smokers. Smoked Seduction BBQ Supply and Catering provided the lo- cation.
