Grilled fish with avocado and herb salad


















               Ingredients



               4 fillets White fish, 180g each
               1 Tbsp  Avocado oil, or olive oil
               1        Avocado, diced into 1cm cubes
               1        Lemon, juice of

               2 Tbsp  Olive oil
               ¼ cup  Fresh parsley
               ¼ cup  Mint leaves, torn
               ¼ cup  Pine nuts, toasted
               Directions


                   1.  Heat a grill on high. Brush portions of fish all over with oil and season
                       them with salt and pepper.
                   2.  Place fish portions on a rack over an oven pan and grill for 3 to 4 minutes on
                       each side, turning once. Remove fish to serving plates.
                   3.  To make the salad, combine avocado, juice of one lemon, olive oil, parsley,
                       mint and pine nuts in a bowl. Season with salt and pepper and toss well.
                   4.  Serve fish scattered with salad.
