KARPAS – DIPPING A GREEN VEGETABLE
At this point in the Seder, it is traditional to eat a green vegetable, such as parsley, dipped in salt water. The parsley represents rebirth, renewal and growth; the salt water represents the tears of enslavement.
Distribute the Karpas and dip it in the salt water, while reciting the blessing.

Blessed are You, Adonai our God, Ruler of the Universe, Who creates the fruit of the earth.
