What do you think of when you hear the word “noodles”? Do you think of cold
Naengmyeon? People in other countries may think of something very different.
There are many different kinds of noodles around the world.

For example, in Italy, noodle dishes are called pasta. Italian pasta comes in a
variety of shapes. Some noodles are long strips. Some look like bow ties. And
others look like pipes or seashells. There are also ear-shaped noodles and wheel-
shaped noodles. There are even very small noodles. They look like pieces of rice.
Lasagna noodles, on the other hand, are very big. These are long, flat, and wide.
Each noodle uses a different type of sauce.

In Shaanxi, China, people eat Biang Biang noodles. They look like belts. They
are very long and thick. Biang Biang noodles are hand-made. People eat them
during the winter. They put hot peppers on the noodles. Today, these noodles
are very popular. But this wasn’t always true. In the past, only poor people ate
them. Today, many restaurants serve them. People like how they taste. And they
like the noodles’ interesting name. The Chinese character for “biang” is very
complex. It’s not even in the dictionary.
