Cooking for Healing: Spring Seasonal: Lunch























        Veggie, Goat Cheese,




                           and Radish Toast

             This is an incredibly easy yet tasty toast recipe for a light lunch that is
                                   packed with nutrient dense vegetables!



        Ingredients                                            the asparagus in olive oil and roast for
        2 cups chopped fresh asparagus                         about six minutes

        1 teaspoon olive oil
        4 oz goat cheese                                       While roasting, make the goat cheese
        4 tablespoons of any milk                              spread by stirring the cheese and milk until

        2 teaspoons fresh dill                                 a spread is formed. Add the dill and chives.
        2 teaspoons fresh chives

        1 cup shelled peas                                     Take out the asparagus and add the peas,
        4 slices of bread, sourdough or French                 roasting another two minutes. Then,
        4 radishes, sliced                                     assemble the toast! To the toasted bread,

        Salt and pepper                                        spread the cheese, and top with the roasted
                                                               veggies and fresh radish.

        Instructions
        Preheat the oven to 400 degrees, and line a  Season with salt and pepper.
