Cook the brown rice. Sauté bell peppers, mixed vegetables,
scallions, garlic and ginger with canola oil. Add the eggs and
break them up in the pan while cooking. Fold in rice, soy sauce
and vinegar. Cook until liquid is absorbed. Stir in sesame oil 41
and serve.
