                                                                                                                                                                                SALAD                  DRESSING
                                                                                                                                                                                5 small heads Bibb lettuce,   ⅓ C sugar
                                                                                                                                                                                quartered              1 t celery seed
                                                                                                                                                                                1½ lbs small cooked shrimp,   1 T grated onion
                                                                                                                                                                                cleaned                ¼ C cider vinegar
                                                                                                                                                                                3 large peeled oranges,   1 t salt
                                                                                                                                                                                sectioned              1 t dry mustard
                                                                                                                                                                                1 medium peeled red onion,   dashes of pepper,
                                                                                                                                                                                thinly sliced          to taste
                                                                                                                                                                                1 red bell pepper, sliced in   ½ C corn or canola
                                                                                                                                                                                strips                 oil
                                                                                                                                                                                1 avocado
                                                                                                                                                                                ½    C cilantro, optional


                                                                                                                                                                                Directions
                                                                                                                                                                                l  Combine all dressing ingredients except the corn or canola
                                                                                                                                                                                oil in a blender or use a hand rotary blender. Slowly add the
                                                                                                                                                                                corn or canola oil. Do not refrigerate.

                                                                                                                                                                                l  Place the lettuce, shrimp, orange sections, onion and red
                                                                                                                                                                                bell pepper in a salad bowl and toss.
                                                                                                                                        Salad                                   l  Toss lightly and serve immediately.
                                                                                                                                       CITRUS SHRIMP                            l  Shake the dressing and pour over salad mixture.
