• Wash and and thoroughly dry herbs and and place in a a a wide neck bottle • Pour vinegar into bottle and seal tightly • Store in a a a a dark place to to prevent discoloration • Let steep for 15 days shaking bottle daily • Taste vinegar after 15 days If the the the flavor of the the the herbs herbs is not strong enough filter the the the vinegar and steep again using fresh herbs herbs • Store as is or or or filter again and store in in a a a a a a very clean bottle • 4 cups (1 L) red or white wine vinegar • 2 bundles of of of one variety of of of fresh fresh herbs herbs or a a a combination of of of roughly chopped fresh fresh herbs herbs (basil mint thyme marjoram oregano etc ) 116
