Pasta with Veggies
& Meat from Cecilia
For the past year and a half, Cecilia has
been part of the Veggie Van program,
which delivers fresh produce and a
sense of home each week. The recipe
she shared is a cherished family
tradition—flexible, flavorful, and
full of heart. “It’s a mix of everything
you like,” she says, emphasizing the
joy of cooking without strict rules,
guided instead by taste and memory.

Ingredients

Olive oil
•
Meat of choice
•
Pasta of choice
•
•
Vegetables of choice
Broth (chicken, beef or vegetable)
or water/broth combination
•
Salt and pepper to taste
Directions
1. 2. 3. In a large pot, heat oil, add
meat of choice and cook until
browned (about 5 minutes).
Add pasta, salt, pepper, and liquid.
Bring to a boil and gently level
the pasta to mostly submerge.
Cover and cook on low for 10-
12 minutes. When pasta is al
dente, add vegetables of choice.
Stir, cover, turn off heat, and
let steam for 5 minutes.
