José has been part of the Veggie Van
community for a couple of years,
and he loves how it’s helped him eat
more fresh fruits and vegetables. He’s
especially proud of creating a simple,
tasty recipe on his own, one that invites
others to add their own twist. For José,

1. Mash the plantain and mix it with
the cornmeal and a pinch of salt.
2. Gradually add water until
you form a soft dough.
3. Shape into arepas and cook
them in a hot pan until golden
brown on both sides.
