Potato, Carrot and Onion
Salad from Luciano
Luciano has only been part of the
Veggie Van community for three
months, but it’s already sparked a
love for fresh, healthy food. Inspired
by the produce he receives, he
created a simple, nourishing recipe
that reflects his new passion and
encourages creativity in the kitchen.
For Luciano, cooking is about more
than just ingredients—it’s about
feeling good and sharing that joy
with others. He sees food as a way to
connect and care, and he dedicates
this recipe to his mom, who first
showed him that healthy eating can
be both delicious and filled with love.
Ingredients
•
2 potatoes, cooked and diced
•
1 carrot, cooked and diced
•
1/2 onion, thinly sliced
•
2 tablespoons mayonnaise
or plain yogurt
•
Salt and pepper to taste
Directions
1. In a large bowl, combine
potatoes, carrots and onion
2. Add mayonnaise or
yogurt and mix well
3. Season with salt and
pepper to taste.
4. Refrigerate for 10 minutes
before serving.
