Lettuce, Tomato, Onion and
Corn Salad from Matilde
Matilde has been part of the Veggie
Van community for a couple of years
and finds joy in cooking, especially
when it reflects her true self—full of
smiles and warmth. Inspired by her
neighbors, she created this dish on
her own and loves how cooking brings
people together. For her, food is more
than nourishment; it’s a way to connect,
share laughter, and build community.
She calls the Veggie Van a blessing,
especially since she doesn’t drive—it
delivers fresh produce right to her
door, helping her stay healthy and
keep sharing her love of cooking.
Matilde dedicates this recipe to her
friend Cecilia, who showed great
kindness during a recent hurricane by
feeding many. This dish is her small
tribute to Cecilia’s big-hearted spirit.
Ingredients
•
1 head of romaine lettuce, chopped
•
1 tomato, diced
•
1/2 onion, thinly sliced
•
1/2 cup cooked corn
•
2 tablespoons olive oil
•
Juice of half a lemon
•
salt and pepper to taste
Directions
1. In a large bowl, combine lettuce,
tomato, onion and corn.
2. Drizzle with olive oil
and lemon juice.
3. Season with salt and
pepper to taste.
4. Toss well and serve chilled.
