Cabbage and Carrot Salad
from Elizabeth

Veggie Van community for three

She’s sharing a favorite recipe—not

it’s long-lasting and perfect for busy
weeks. It’s a cultural dish close to her
heart, full of memories from back home.
What she loves most is the dressing—
it’s the secret to the flavor and
something she never tires of. Easy,
affordable, and versatile, it’s a meal
she made often in her country and still
enjoys today. Elizabeth dedicates this
recipe to her hardworking daughter,
as a way to share both her love for
cooking and her pride in her family.
Ingredients

2 cups shredded cabbage
•
1 carrot, grated
•
2 tablespoons mayonnaise
•
1 teaspoon apple cider vinegar
•
Salt and pepper to taste
Directions
1. In a large bowl, combine
cabbage and carrots.
2. Add the mayonnaise and apple
cider vinegar and mix well.
3. Season with salt and
pepper to taste.
4. Refrigerate for 15 minutes
before serving.
