skin contains fibre. Of particular note is its richness in Folic acid, Vitamin C, carotenes
and Vitamin A, as well as minerals such as potassium and, to a lesser extent, phos-
phorus, calcium and magnesia.
In addition to these nutrients, the grape contains other substances, such as resveratrol
(in the skin of black, purple and red grapes, and in seeds, in those grapes having them),
an antioxidant that, in addition to providing health benefits, features a fungicidal effect
preventing the growth of fungi in the plant; and anthocyanins, which form the pigments
of the skin of dark grapes, and tannins, also present in the skin.
These substances, called photochemicals, are bioactive substances found in foods of
plant origin in very small quantities (milligrams and micrograms). They are sometimes
called "functional foods", which provide health benefits and longevity beyond their nutri-
tional contributions. Many research groups today are conducting studies on them to
ascertain whether they could play an important role in the prevention and/or treatment
of various diseases.
To take advantage of its nutritious and healthy properties, it is advisable to eat grapes in
their pure state, with the skin, as well as the products made with it.
